Nettle Soup

Nettles: The Green Power

They are very detoxifying and also a superfood.

Nettles are rich in minerals such as potassium, iron, magnesium, sodium, silicon, chlorophylls, and vitamin B.

Ingredients:

5 handfuls of fresh nettle leaves
3 potatoes
1 onion
1 liter of broth
Crème fraîche or cream cheese
Butter
Herb salt, pepper, nutmeg

Chop the onion. Wash the nettle leaves if necessary and then chop them finely.

Sauté the onion in butter. Add the chopped potatoes and simmer briefly. Pour in the broth. After about 15 minutes, add the nettle leaves and bring to a boil. Add 1-2 tablespoons of crème fraîche or cream cheese and then purée everything. Season with herb salt, pepper, and nutmeg.

Finally, garnish with nettle seeds and leaves, if desired.
