My Own Recipe For Crusty Cheesy Cob..
1 red onion diced fine
2x spring onions sliced fine
250 g cream cheese
1 1/2 cups sour cream
2 cups mozzarella grated
1 cup tasty cheese grated
1 sour dough cob loaf
1/2 cup spinach leaves
4x White fresh button mushrooms sliced
250 g vegan vege bacon rashers diced [these are optional]
1/2 cup canned creamed corn [these are optional]
cut chives or parsley for garnish

Method
- Cut the top off cob loaf and pull the soft bread out.
- Place the top and stuffing aside.
- Fry onions and vege bacon, spinach leaves & mushrooms then place in a bowl
- Add the block of softened creme cheese, & sour cream and grated cheeses. Mix well and fill the cob loaf.
- Place bread lid on and wrap in foil.
- Bake at 180C for 45 minutes.
- Remove foil and cook for a further 10 minutes. stir it..
- Add the bread pieces and bake for 7-10 minutes or until crisp.
- To serve, place cob on a platter with crispy bread pieces around the outside & garnish.
