Tomato Fritters

 

Popular on the island of Santorini, this easy Greek appetizer recipe uses fresh tomatoes and red onions mixed with spices and flour to create the perfect meze. Quick and easy to prepare, these Greek tomato fritters will leave your vegan guests smiling.

 

Ingredients

3 tomatoes, diced (450 g total)
1/2 red onion, chopped (100 g)
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper
1/2 teaspoon salt
1/2 teaspoon dried oregano
4 tablespoons fresh parsley
3/4 cup all-purpose flour (90 g)
Olive oil for cooking

Tzatziki Mayonnaise:
3/4 cup vegan mayonnaise (175 ml)
2 tablespoons dill, chopped
1/2 teaspoon onion powder
1/2 cucumber, finely diced or grated (125 g)

 

Directions

1 In a large bowl, combine tomatoes, red onions, cumin, crushed red pepper, salt, oregano and parsley.

2 Crush the mixture using your hands.

3 Stir in the flour and mix well. The quantity of flour may vary, the dough must have a slightly liquid consistency.

4 In a frying pan heat 2 to 3 tablespoons of olive oil.

5 Add 1/4 cup (60 mL) of the mixture at a time. Add oil as needed.

6 Cook 3 minutes on each side or until the patties are golden brown and the center is cooked. Add oil as needed.

7 Serve with tzatziki mayonnaise.

8 Tzatziki Mayonnaise:

9 In a bowl, mix all ingredients and refrigerate until serving.
