Indulge in the elegance of Raspberry Tiramisu - a no-bake dessert that combines creamy mascarpone and fresh raspberries for a truly divine taste experience!

 

Ingredients:

1 cup fresh raspberries, plus more for garnish
1 cup mascarpone cheese
1/2 cup heavy cream
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup strong brewed coffee, cooled
1/2 cup coffee liqueur (optional)
24 ladyfingers
Cocoa powder for dusting

Directions:

In a large bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
Gently fold in the mascarpone cheese until well combined.
In a shallow dish, mix the cooled coffee with the coffee liqueur (if using).
Quickly dip each ladyfinger into the coffee mixture, ensuring they don’t get too soggy.
Arrange a layer of dipped ladyfingers at the bottom of your serving dish.
Spread half of the mascarpone mixture over the ladyfingers.
Scatter half of the raspberries over the mascarpone layer.
Repeat layers once more, finishing with a layer of the mascarpone mixture.
Refrigerate for at least 4 hours, or overnight for best results.
Before serving, dust with cocoa powder and garnish with fresh raspberries.
